For this dish, chick peas are boiled until very tender, then mixed with tahena, garlic, lemon before being lightly salted. Served with Iraqi flat bread just how it should be!!

Salad with Toasted Flat Bread
A combination of lettuce, cucumber, tomato, parsley, cut to small chunks seasoned with olive oil, lemon juice and salt. Small 'torn' pieces of crispy toasted Iraqi bread is mixed with the salad and served immediately, the crispiness of the green salad and the crunchiness of the bread makes this dish very refreshing.

Dates with Walnut, Onion & Yoghurt
Tamar (dates) and Laban (yoghurt) are a must in the Iraqi cuisine. This special Mesopotamia recipe "sweet & savoury flavour" is very unique. Onions and dates are finely sliced and fried then mixed with plain yoghurt and walnuts. A taste bud treat if there ever was!!

Dolma
Hand cored and rolled vegetables and vine leaves filled with a mix of rice, tomato, garlic, with a hint of tangy flavouring (tamarhen, pomegranate sauce, fresh lemon) supplemented by special spices. Boiled, then simmered very slowly until cooked to allow the flavours to fully appreciated.
Mukluba
Mukluba is a combination of fried aubergines, onions, tomatoes, peppers, before being layered in a pot then topped with white rice and seasoned with specially made spices and cooked very gently before being turned upside down and served.
DESSERTS
Backlawa
Very thin layers of pastry filled with walnuts or pistachio and drizzled with cardamom flavoured sugar syrup specially ordered and prepared for Mesopotamia.
Mu Aasale
Dates which are first de-stoned, then filled with walnuts and lightly cooked in a date syrup mixed with fried sesame seeds, ginger powder, and a sprinkling of aniseed seeds. An all time Iraqi favourite. Even if you do not normally like dates, you will love these!!
